
Today at Fabled Farms, we processed eight of our Coturnix quail, marking another step toward self-sufficiency and ethical meat production. Quail are an excellent source of lean protein, and the processing is surprisingly quick and simple. Following the method outlined in this video, we found that each bird took less than five minutes to fully process from live bird to freezer-ready meat.
Why Process Quail?
Quail are a fantastic choice for small-scale farms due to their fast growth rate, efficient feed conversion, and high nutritional value. They reach maturity in just six to eight weeks, making them a sustainable option for homegrown protein. Additionally, they require minimal space compared to chickens or larger poultry.
The Quick and Humane Processing Method
The method we used was not only efficient but also ensured a humane and respectful process. Here’s a quick breakdown of the steps:
Dispatching the Bird – We used sharp shears to quickly remove the head, ensuring an instant and humane method.
Skinning Instead of Plucking – Unlike chickens, quail are much easier to skin. A simple tear along the breast allowed us to peel away the feathers and skin in one swift motion, avoiding the time-consuming plucking process.
Removing the Innards – With a quick cut along the lower abdomen, the internal organs were easily removed. The heart, liver, and gizzard can be kept for additional use, or composted if not needed.
Final Rinse and Storage – After a thorough rinse, the birds were placed in cold water to cool before being vacuum-sealed for storage or immediate use.

We were truly amazed at how fast and simple processing quail can be. From start to finish, each bird took less than five minutes, making this an incredibly time-efficient method for small-scale poultry farmers. With a little preparation and the right tools, raising and processing quail can be an accessible and rewarding endeavor.
